Pesto Chicken Panini

When I was in Boston last month, my friend took me to an Italian deli where we had some lunch. I ordered a pesto chicken panini that was seriously one of the tastiest sandwiches I have ever eaten. I'm pretty sure I said "mmmm" outloud several times while eating it. And while I was eating, I was thinking to myself "I have to make this when I get home."
And I did.
So here's the scoop.

Pesto Chicken Panini

chicken breast
ciabatta
tomato, sliced
fresh mozarella
pesto (I made this recipe)
olive oil

Warm up your grill (George Foreman anyone?)

Slice the chicken breast in half so it is thinner (like cutting a deck of cards; sorry, that's the best analogy I could think of). Salt and pepper the chicken, then grill it.

Brush olive oil on the ciabatta and grill it a little.

Spread some pesto on the ciabatta, add a slice of tomato and a slice of mozarella. Place chicken on top, and top with other half of ciabatta.

Put on grill and smash together. Grill until cheese is melted.
